Our test kitchen is absolutely blooming with these Spring 2025 flavors! Every season we’ll release new truffle and wine pairings at an after hours open house.

Live music will be filling the air at our chocolate factory, where we’ll introduce our seasonal truffle flavors in a flight paired with wine or non-alcoholic beverages! You’ll get a chance to enter a raffle with each purchase (everything will be marked down by 10%, we might add!), and the factory will be open for self-guided tours, which is a real treat in itself.
For Spring 2025, we’ve come up with a delightfully delectable Honey Ganache. Think rich amber with a creamy floral finish. The whole thing is encased in a 75% dark chocolate shell and pairs perfectly with the luscious flavors of ripe apricot, honey, and a touch of nuttiness in the C.N. Kopke Fine White Port.
The Lavender Blossom Caramel is everything you want in a chocolate. It’s bright, botanical, and the ground lavender blossoms it contains gives it an authentic flavor, not that soapy taste you might be used to! This truffle’s blossomy center melds beautifully with the Masserie Dugento 2022 Negroamaro’s silky smooth texture, creating a delightful interplay of spring fruit and caramel warmth, making for a fresh yet indulgent pairing. It’s like tasting your way through a spring garden.
Our Spicy Togarashi Caramel features a 7-spice blend from Japan containing chilis, orange peel, black sesame, white sesame, ginger, and nori. This blend contrasts with the Domaine de la Geraudrie 2023 Muscadet’s highly acidic and fresh fruity palate creating the perfect complementary experience: savory spice and a little zing!
